Roasted Potatoes and Lemon with Dill

The lemon slices are a subtle and delightful addition to this very simple dish.

2 lbs. new potatoes, halved 1 lemon, thinly sliced
2 T. olive oil sea salt and freshly ground black pepper to taste
2 T. coarsely chopped fresh dill  
  1. Preheat the oven to 450o.

  2. On a rimmed baking sheet, toss the potatoes and lemon with the oil, salt, and pepper.

  3. Roast, stirring once, until tender, 25 to 35 minutes.

  4. In a large bowl, toss together the potatoes, lemon, and dill and serve.
