Roasted Potatoes and Lemon with Dill
The lemon slices are a subtle and delightful addition to this very simple dish.
2 lbs. new potatoes, halved |
1 lemon, thinly sliced |
2 T. olive oil |
sea salt and freshly ground black pepper to taste |
2 T. coarsely chopped fresh dill |

- Preheat the oven to 450o.
- On a rimmed baking sheet, toss the potatoes and lemon with the oil, salt, and pepper.
- Roast, stirring once, until tender, 25 to 35 minutes.
- In a large bowl, toss together the potatoes, lemon, and dill and serve.
