Lime Marinated Flank Steak

We found this recipe on a blog, whose author credits it to Martha Stewart's Great Food Fast.

Remember to cook the steak only to medium rare and to slice the meat on the diagonal.

1/2 c. lime juice 2 T. soy sauce
2 green onions, thinly sliced 2 T. fresh ginger, minced
1/2 t. red pepper flakes 1/2 t. cayenne
salt and freshly ground black pepper, to taste 1 1/2 lbs. flank steak
4 lime wedges  
  1. Mix the first seven ingredients (all but the steak) in a Ziplock bag. Add the steak, turning it to coat it thoroughly. Refrigerate for 30 minutes, turning occasionally.

  2. Prepare the broiler or grill. Once the coals are hot, rub a paper towel with vegetable oil on the grates, using tongs. Cook the steak 4-5 minutes per side.

  3. Remove meat from the grill and let it rest for 5-10 minutes to allow the meat to reabsorb the juices. Slice thinly, across the grain,and serve with the lime wedges.
