Maple Syrup Sweet Potatoes
Waiting in a physician's examination room (rarely a fun experience), Phil found this and several other interesting
recipes in an issue of Real Simple. Over the next couple of weeks, we tried them all. None were
bad. This one was memorable--and very simple.
Note on technique: When we say "scrubbed," we mean that you should not peel the potatoes.
1 1/2 lb. sweet potatoes, scrubbed and cut into wedges |
sea salt and freshly ground pepper to taste |
2 T. olive oil |
1 T. maple syrup |
2 scallions, chopped |

- Bring a broiler or grill to medium high heat.
- In in a large bowl, season the sweet potatoes with salt and pepper, and toss them with 1 tablespoon of the oil.
Grill, turning often, until tender and slightly charred, 10 to 12 minutes. Reserve the bowl.
- To the reserved bowl, add the syrup, scallions, the remaining oil, and more salt and pepper.
Add the sweet potatoes and toss to coat. They are ready to serve.
