Broiled Honey Salmon

While Tracy and George took a cruise to Bermuda, we experimented with a cookbook we found on their shelf. This is one of our happy discoveries.

6 T. honey 6 T. soy sauce
2 lbs. salmon fillet, skin on 1/4 t. crushed red pepper flakes
1 generous T. fennel fronds, dill, or flat-leaf parsley, finely chopped  
  1. Preheat the broiler. Line a baking sheet with foil.

  2. Slice the salmon crosswise in strips about 2 inches wide.

  3. Combine the honey and soy sauce, mixing well. Lay the salmon on the foil, skin side down, and drizzle a quarter of the sauce over it. Sprinkle with the red pepper and the herbs.

  4. Broil the salmon, using the Canadian Method to calculate the time. Every 2 or 3 minutes, drizzle some more of the sauce until the salmon turns a deep mahogany. When done, take directly to the table and serve.
