2941 Salad
We first had this salad at 2941, a superb local restaurant where we celebrated our wedding anniversary.
You can experiment with dressings, but we highly recommend Roasted Garlic Balsamic Vinaigrette.
1 c. baby spinach or arugula |
1 c. chopped radicchio |
vinaigrette of choice |
1/4 c. dried cranberries |
1/4 c. pine nuts |

- Wash the greens thoroughly, tear the leaves, and dry them with a cloth towel or, better, by spinning.
(Leaving water on the leaves will prevent the dressing from adhering.)
- Place the greens in a large bowl. Add the vinaigrette, and toss the salad.
- Top the dressed greens with the cranberries and pine nuts, and serve.
