Salmon au Poivre
This recipe illustrates well our general assumption that many of the best fish
recipes are the simplest.
1 1/2 pound salmon fillet |
2 T. lemon juice |
1 large garlic clove, minced |
1/2 t. sea salt |
3 T. coarsely cracked black pepper |

- Place the salmon in a shallow, nonreactive dish. In a separate bowl, mix the lemon juice,
garlic, and salt. Pour the marinade over the salmon, turning it several times to coat both
sides. Set it aside for 5-10 minutes.
- Bring a heavy skillet up to temp over medium heat.
- Using a mortar and pestle, crack the black pepper. Spread it on a plate. Lightly press
the salmon fillet into the pepper, coating both sides.
- Lightly oil the skillet, and cook the fillet using the Canadian Method
to compute the required time (about 5 minutes per side if the fillet is one-inch thick).
