Salmon au Poivre

This recipe illustrates well our general assumption that many of the best fish recipes are the simplest.

1 1/2 pound salmon fillet 2 T. lemon juice
1 large garlic clove, minced 1/2 t. sea salt
3 T. coarsely cracked black pepper  
  1. Place the salmon in a shallow, nonreactive dish. In a separate bowl, mix the lemon juice, garlic, and salt. Pour the marinade over the salmon, turning it several times to coat both sides. Set it aside for 5-10 minutes.

  2. Bring a heavy skillet up to temp over medium heat.

  3. Using a mortar and pestle, crack the black pepper. Spread it on a plate. Lightly press the salmon fillet into the pepper, coating both sides.

  4. Lightly oil the skillet, and cook the fillet using the Canadian Method to compute the required time (about 5 minutes per side if the fillet is one-inch thick).
