Tarragon Mayonnaise

This recipe was originally targeted for asparagus. You might also try it with steamed shrimp or grilled salmon or broccoli or green beans. . . .

The original version of this recipe called for making your own mayonnaise. We have no plans to do so, but we wouldn't discourage you from trying.

2 t. fresh parsley, minced 2 t. fresh tarragon, minced
2 t. shallots, minced 1 1/2 t. lemon juice
1/2 c. mayonnaise  
  1. Mix the herbs, shallots, and lemon juice.

  2. Blend in the mayonnaise. Chill for at least one hour.

1/2 cup
