Soprano Beans

These beans were served by Carmela Soprano in a Sunday dinner scene during the "Fortunate Son" episode, with appropriate credit given to Batali. That episode aired during the third season, more than a year before Batali intended to publish the book. Queries to the author and the show led to its early release.

2 pounds green beans 1/2 c. olive oil
4 garlic cloves, sliced 1 t. red pepper flakes
2-3 inches of anchovy paste salt and fresh ground black pepper to taste
1 small bunch mint leaves Parmesan cheese
  1. Cut or snap the ends of the beans.

  2. Heat the olive oil in a large skillet. Add the garlic, red pepper, and anchovy paste, and saute for 2 minutes. Add the beans, and saute for 20 minutes.

  3. Season with the salt and pepper. Toss with the mint. Grate the Parmesan over the beans, and serve.
