Grilled Zucchini with Fresh Thyme

This quick, simple recipe works equally well as a side dish and as an appetitizer.

2 small zucchini, thinly sliced lengthwise 2 T. olive oil
sea salt to taste 1 T. thyme leaves, carefully stemmed
  1. Preheat the broiler. Arrange the zucchini slices on a broiling pan. Lightly brush them with the oil, and season them with the salt.

  2. Place the pan in the broiler, about 5 inches from the heat. In 2-3 minutes, when the zucchini has turned golden brown, gently flip the slices, and repeat the oil and salt process on the uncooked side. Resume broiling until the second side has turned golden brown.

  3. Remove the zucchini slices to a serving dish. Lightly drizzle with additional oil, and sprinkle with the thyme. Allow the zucchini cool almost to room temperature before serving.
