Tassajara Apple Pancake Sam

What is a "sam"? We don't really know. What we do know is that this simple recipe produces a lovely, delicious popover-style dish. We recommend serving it with maple syrup.

If you are doubling the recipe to serve 4, use a 15- or 16-inch pan.

1 medium apple, cored and sliced into thin wedges juice of 1 lemon
2 T. brown sugar 2 T. butter
3 large eggs, beaten 1/2 c. all-purpose flour
1/2 c. milk ground cinnamon (or cloves)
  1. Preheat the oven to 400o.

  2. Gently toss the apple slices with the lemon juice and brown sugar. Set aside.

  3. Put the butter in a round, 8- or 9-inch baking pan, and place the pan in the oven. Allow roughly 5 minutes to melt the butter and heat it. Do not let it brown.

  4. While the butter is melting, whisk together the eggs, flour, and milk, beating only briefly. Don't worry that it is still a bit lumpy. Pull the baking pan from the oven, and pour into it the batter.

  5. Arrange the apple slices around the outer edge of the pan, putting the last two or three in the middle. Top the apples with the remaining lemon juice-brown sugar mix. Bake for 25 minutes, until firm and puffy.

  6. Remove from the oven, sprinkle with the cinnamon, and serve with warmed maple syrup.
