Italian Broccoli

A few simple steps and you have transformed steamed broccoli into a distinctive side dish.

Note that this technique works equally well with a half dozen other vegetables.

2 pounds broccoli 3 T. olive oil
2 cloves garlic, minced 1 pinch red pepper flakes
salt and freshly ground black pepper, to taste  
  1. Steam the broccoli after trimming it and separating the florets. When its barely tender, shock the broccoli (to stop the cooking process) by draining the hot water, cooling it with cold water, and adding some ice cubes. Set aside.

  2. Heat the oil in a large skillet. Add the garlic and red pepper flakes. Stir and cook for a minute or two.

  3. Add the broccoli, stir, and cook for 3-4 minutes.

  4. Season and serve immediately.
