Smears for Pan-Seared Steak

Blue Cheese Smear

2 T. butter 2 T. blue cheese
  1. Soften the butter (20 seconds in microwave or an hour at room temperature).

  2. Use a fork to mash together the butter and the cheese.

  3. Spread the mix over the hot steaks and serve immediately.

Horseradish Smear

3 T. butter 3 T. prepared horseradish
1/2 t. vinegar salt and freshly ground pepper to taste
  1. Soften the butter (20 seconds in microwave or an hour at room temperature).

  2. Use a fork to mash together the butter and the horseradish. Mix in the vinegar, salt, and pepper.

  3. Spread the mix over the hot steaks and serve immediately.
