Green Beans with Mustard Sauce

In anticipation of an early Thanksgiving gathering with Aliceann's family, we undertook some serious research, looking for relatively simple variations on some seasonal standards. What could be simpler than green beans? Add the mustard sauce, and . . . fantastic.

2 pounds green beans 1 T. Dijon mustard
juice of 1 lemon 1/3 c. olive oil
salt and freshly ground black pepper to taste  
  1. Cut or snap the ends of the beans. Steam or boil them for approximately 5 minutes, until they are crisp-tender. Drain.

  2. Meanwhile, mix in a small bowl the mustard, lemon juice, salt, and pepper. Slowly drizzle in the oil, whisking as you go.

  3. Add the mustard sauce to the beans, toss, and serve.
