Cousin Jack's Green Beans with Walnuts and Gorgonzola
For a number of years, when he worked as the lead chef at Parigi, Cousin Jack taught
cooking. He responded to our sending him the 2nd edition of our cookbook with
a collection of recipes from his classes. This was one of our favorites.
1 1/2 pounds green beans |
1 T. butter |
1 T. walnut (or olive) oil |
1/4 c. chopped walnuts |
1 T. fresh basil, chopped |
salt and freshly ground black pepper to taste |
1/4 c. Gorgonzola or other strong blue cheese |

- Cut or snap the ends of the beans. Steam or boil them for approximately 5 minutes,
until they are crisp-tender. Shock the beans with cold running water or a couple trays
of ice cubes (to stop the cooking). Set aside and pat dry.
- Combine the butter, oil, and walnuts in a large pan. Cook over medium heat until
the walnuts are golden. Add the beans, heating them through.
- Toss with the basil, salt, and pepper. Remove to a serving bowl.
Sprinkle with the cheese and toss again.
