Cousin Jack's Green Beans with Walnuts and Gorgonzola

For a number of years, when he worked as the lead chef at Parigi, Cousin Jack taught cooking. He responded to our sending him the 2nd edition of our cookbook with a collection of recipes from his classes. This was one of our favorites.

1 1/2 pounds green beans 1 T. butter
1 T. walnut (or olive) oil 1/4 c. chopped walnuts
1 T. fresh basil, chopped salt and freshly ground black pepper to taste
1/4 c. Gorgonzola or other strong blue cheese  
  1. Cut or snap the ends of the beans. Steam or boil them for approximately 5 minutes, until they are crisp-tender. Shock the beans with cold running water or a couple trays of ice cubes (to stop the cooking). Set aside and pat dry.

  2. Combine the butter, oil, and walnuts in a large pan. Cook over medium heat until the walnuts are golden. Add the beans, heating them through.

  3. Toss with the basil, salt, and pepper. Remove to a serving bowl. Sprinkle with the cheese and toss again.
