Chevre with Olive Oil and Garlic

The first New Years' Eve spent at Carol Place, we hosted a small dinner party with some very special friends. Because we had just discovered Patricia Wells' cookbook, we turned there first for menu ideas. This simple spread, served with fresh breadsticks, set the stage for a long evening of dining, friendship, and several outrageous stories. Have we ever told you about the possible consequences of switching medications with your dog? Another time.

A very distinct but appealing variation calls for replacing the garlic with 2 teaspoons of thyme.

2 large cloves garlic, minced 2 t. olive oil
8 ounces chevre (or other mild goat cheese)  
  1. Blend the ingredients, beginning with the garlic and oil, then crumbling the cheese before adding it.

  2. Chill for at least an hour before serving. Serve with breadsticks.
